  1. In a mixing bowl, stir together 3 cups of the flour and salt.
  2. Combine eggs, lemon juice and olive oil; add to flour.
  3. Mix well.
  4. Sprinkle kneading surface with remaining flour and knead for 10 minutes.
  5. Cover and let rest 10 minutes.
  6. Roll out and cut into desired shapes.
  7. Cook like regular pasta.
