  • Preheat oven to 350. Put olive oil in shallow baking dish. Add all veggies (not lemon) and spices, and stir. Cut lemon in half. Squeeze 1/2 of the lemon over the veggies and cut the other 1/2 into slices and place in the veggie mixture. Place in the oven and cook for 30 minutes to an hour (until veggies are tender and slightly browned). Take out the lemon slices. Serve with warmed flour tortillas or alone as a side dish.
