- 1 c. diced celery
- 1 c. chopped green onions
- 2 tbsp. butter
- 3 c. cooked rice
- 1 tbsp. grated lemon rind
- 1 tsp. salt
- 1/4 tsp. pepper
- Saute celery and onions in butter.
- Add rice, lemon rind and seasonings.
- Cook over low heat about 2 minutes.
