Lettuce Wedge with Poppy Seed Dressing

1/3 cup white vinegar 1 1/2 T. onion juice 1/2 cup sugar 1 t. dry mustard 1 t. salt 1 cup oil 2 T. poppy seeds 1 head iceberg lettuce

In small bowl, mix vinegar, onion juice, sugar, mustard, and salt. Stir vigorously by hand or with electric mixer set on low. Whisking constantly, pour in oil in a slow steam thin stream and continue to bet until dressing is smooth and thick. Stir in poppy seeds. Cut lettuce into 6 wedges. Lay each on a chilled salad plate. Ladle on 2 to 3 T. dressing or to taste. Serves 6 Source: My Old Recipes
