- 2½ cups chopped, cooked chicken meat
- 2 cups chopped celery
- ½ cup chopped salted almonds
- ¼ cup chopped green bell pepper
- 2 tablespoons minced onion
- 2 tablespoons chopped pimento peppers
- ¾ teaspoon salt
- 2 tablespoons lemon juice
- ½ cup mayonnaise
- ⅓ cup shredded Swiss cheese
- 3 cups crushed potato chips
Directions[]
- Preheat oven to 350 °F.
- Combine the chicken, celery, almonds, bell pepper, onion, pimento, salt, lemon juice, and mayonnaise.
- Mix well and pour into a 1½ quart casserole dish.
- Top with grated cheese and the crushed potato chips.
- Bake for 25 minutes or until cheese is melted.
