These golden-speckled buns will look lovely served alongside your main course.
Ingredients[]
- 1/4 cup (60 ml) warm water
- 1 tsp (5 ml) granulated sugar
- 1/4 oz (8 g) envelope of active dry yeast (or 2 1/4 tsp, 11 ml)
- 4 cups (1l) all-purpose flour
- 2 cups (500 ml) light rye flour
- 3/4 cup (175 ml) wheat germ, toasted
- 1/4 cup (60 ml) brown sugar, packed
- 1 1/2 tsp (7 ml) salt
- 1 large egg, fork-beaten
- 1 egg yolk, large
- 1 1/2 cups (375 ml) warm water
- 1/2 cup (125 ml) butter (or hard margarine), melted
- 3 tbsp (50 ml) all-purpose flour, approximately
- 1 egg white, large
- 1 tsp (5 ml) water
- 2 tbsp (30 ml) wheat germ (optional)
Directions[]
- Stir first amount of warm water and granulated sugar in small bowl until sugar is dissolved.
- Sprinkle yeast over top.
- Let stand for 10 minutes.
- Stir until yeast is dissolved.
- Combine next 5 ingredients in extra-large bowl.
- Make a well in centre.
- Add next 4 ingredients and yeast mixture to well.
- Mix until soft dough forms.
- Turn out dough onto lightly floured surface.
- Knead for 5 to 10 minutes until smooth and elastic, adding second amount of all-purpose flour, 1 tbsp (15 ml) at a time, if necessary, to prevent sticking.
- Place in greased extra-large bowl, turning once to grease top.
- Cover with greased waxed paper and tea towel.
- Let stand in oven with light on and door closed for about 45 minutes until doubled in bulk.
- Punch dough down.
- Turn out onto lightly floured surface.
- Knead for about 1 minute until smooth.
- Divide into 24 portions.
- Roll into balls.
- Arrange, evenly spaced apart, on large greased baking sheet.
- Cover with greased waxed paper and tea towel.
- Let stand in oven with light on and door closed for about 30 minutes until almost doubled in size.
- Stir egg white and water in small bowl.
- Brush over top.
- Sprinkle with wheat germ.
- Bake in 375°F (190°C) oven for about 20 minutes until golden and hollow sounding when tapped.
- Remove rolls from baking sheet.
- Transfer to wire rack to cool.
Makes 24 rolls
