These golden-speckled buns will look lovely served alongside your main course.

  1. Stir first amount of warm water and granulated sugar in small bowl until sugar is dissolved.
  2. Sprinkle yeast over top.
  3. Let stand for 10 minutes.
  4. Stir until yeast is dissolved.
  5. Combine next 5 ingredients in extra-large bowl.
  6. Make a well in centre.
  7. Add next 4 ingredients and yeast mixture to well.
  8. Mix until soft dough forms.
  9. Turn out dough onto lightly floured surface.
  10. Knead for 5 to 10 minutes until smooth and elastic, adding second amount of all-purpose flour, 1 tbsp (15 ml) at a time, if necessary, to prevent sticking.
  11. Place in greased extra-large bowl, turning once to grease top.
  12. Cover with greased waxed paper and tea towel.
  13. Let stand in oven with light on and door closed for about 45 minutes until doubled in bulk.
  14. Punch dough down.
  15. Turn out onto lightly floured surface.
  16. Knead for about 1 minute until smooth.
  17. Divide into 24 portions.
  18. Roll into balls.
  19. Arrange, evenly spaced apart, on large greased baking sheet.
  20. Cover with greased waxed paper and tea towel.
  21. Let stand in oven with light on and door closed for about 30 minutes until almost doubled in size.
  22. Stir egg white and water in small bowl.
  23. Brush over top.
  24. Sprinkle with wheat germ.
  25. Bake in 375°F (190°C) oven for about 20 minutes until golden and hollow sounding when tapped.
  26. Remove rolls from baking sheet.
  27. Transfer to wire rack to cool.

Makes 24 rolls
