  1. Sauté onions and celery in olive oil in a large saucepan.
  2. After a few minutes, add carrots and saute until onions go pearly.
  3. Stir in potatoes and add enough broth to cover vegetables by a couple of inches.
  4. Bring to boil, reduce heat and simmer until veggies are tender.
  5. Add the orange juice, zest and ginger.
  6. Blend the soup.
  7. Add more stock to achieve the desired thickness.
  8. Season with salt, freshly ground black pepper, bouillon powder and soymarg.
