A coffee-graham cracker crust enhances these rich chocolate cheesecakes that need no adornment. package a pair as a gift in these cute pans along with a bag of coffee beans.

  1. Melt butter in saucepan over medium heat.
  2. Remove from heat; stir in graham cracker crumbs, 1/3 cup sugar, and coffee granules.
  3. Press evenly into bottoms of 6 ungreased 4" mini springform pans.
  4. Place pans on a baking sheet.
  5. Bake at 350° for 6 to 8 minutes; cool.
  6. Reduce room temperature to 325°.
  7. Combine cream cheeses, sour cream, and 1/2 cup sugar.
  8. Beat at medium speed with an electric mixer until blended.
  9. Add eggs, 1 at a time, beating just until blended after each addition.
  10. Stir in melted chocolate and vanilla.
  11. Pour filling into pans.
  12. Bake at 325° for 21 to 23 minutes or just until set. (Cheesecakes will firm as they chill.)
  13. Cool to room temperature.
  14. Chill until ready to wrap and give as gifts.

Yield: 6 (4") cheesecakes.
