A coffee-graham cracker crust enhances these rich chocolate cheesecakes that need no adornment. package a pair as a gift in these cute pans along with a bag of coffee beans.
Ingredients[]
- 6 tablespoons butter or margarine
- 1 2/3 cups graham cracker crumbs
- 1/3 cup sugar
- 1 tablespoon instant coffee or espresso granules
- 2 (8-ounce) packages cream cheese, softened
- 1 (3-ounce) package cream cheese, softened
- 1 (8-ounce) container sour cream
- 1/2 cup sugar
- 3 large eggs
- 1 (11.5-ounce) package milk chocolate morsels, melted and cooled
- 1 teaspoon vanilla extract
Directions[]
- Melt butter in saucepan over medium heat.
- Remove from heat; stir in graham cracker crumbs, 1/3 cup sugar, and coffee granules.
- Press evenly into bottoms of 6 ungreased 4" mini springform pans.
- Place pans on a baking sheet.
- Bake at 350° for 6 to 8 minutes; cool.
- Reduce room temperature to 325°.
- Combine cream cheeses, sour cream, and 1/2 cup sugar.
- Beat at medium speed with an electric mixer until blended.
- Add eggs, 1 at a time, beating just until blended after each addition.
- Stir in melted chocolate and vanilla.
- Pour filling into pans.
- Bake at 325° for 21 to 23 minutes or just until set. (Cheesecakes will firm as they chill.)
- Cool to room temperature.
- Chill until ready to wrap and give as gifts.
Yield: 6 (4") cheesecakes.
