Ingredients[]
- 2 tablespoons butter or margarine
- 1/2 cup graham cracker crumbs
- 2 tablespoons sugar
- 1 teaspoon instant coffee or espresso granules
- 2 (3-ounce) packages cream cheese, softened
- 1/3 cup sour cream
- 3 tablespoons sugar
- 1 large egg
- 1/2 cup milk chocolate morsels, melted and cooled
- 1/2 teaspoon vanilla extract
Directions[]
- Melt butter in saucepan over medium heat.
- Remove from heat; stir in graham cracker crumbs, 2 tablespoons sugar, and coffee granules.
- Press evenly into bottoms of 2 ungreased 4" mini springform pans.
- Place pans on a baking sheet.
- Bake at 350° for 6 to 8 minutes; cool.
- Reduce room temperature to 325°.
- Combine cream cheeses, sour cream, and 3 tablespoons sugar.
- Beat at medium speed with an electric mixer until blended.
- Add egg, beating just until blended.
- Stir in melted chocolate and vanilla.
- Pour filling into pans.
- Bake at 325° for 21 to 23 minutes or just until set.
- Cool to room temperature.
- Chill until ready to serve.
Yield: 2 cheesecakes
