  1. Soak the beans overnight in water to cover.
  2. The next day, drain and rinse them.
  3. Place in a large pot and cover with fresh water.
  4. Add ½ teaspoon of salt.
  5. Bring the water to boil and simmer until the beans are tender, about 1 hr.
  6. Drain.
  7. While the beans are still warm, stir in the remaining ingredients, adding salt and pepper to taste.
