Lone Star State Barbecue Spareribs
 
4 pounds beef or pork spareribs
 
1/4 cup olive oil
 
1 teaspoon salt
 
1 teaspoon freshly ground black pepper
 
4 tablespoons butter
 
1 medium white onion chopped
 
5 garlic cloves minced
 
2 large ripe tomatoes chopped
 
6 ounce can tomato paste
 
1/4 teaspoon Tabasco sauce
 
2 teaspoons Worcestershire sauce
 
1/2 cup brown sugar
 
1 heaping tablespoon Dijon mustard
 
1 teaspoon salt
 
1 teaspoon cayenne pepper
 
1/2 cup red wine
 
1 lemon juiced
 
Start charcoal or wood or fire up your gas grill. Rub the slab of
 
ribs all over with the olive oil then sprinkle liberally with salt
 
and pepper and rub it in. Cover and set aside. In a large skillet
 
over medium heat melt butter. When it begins to bubble add onion and
 
garlic and saut� 3 minutes. Add all remaining ingredients then stir
 
and turn heat to medium low and cook 30 minutes. When grill is ready
 
put ribs bone side down in center of grill. Cover grill and open
 
vents enough to make sure there is air flow then grill ribs for 1
 
hour turning twice during cooking. Baste every 10 minutes with sauce.

  2. Rub the slab of ribs all over with the olive oil then sprinkle liberally with salt and pepper and rub it in.
  3. Cover and set aside.
  4. In a large skillet over medium heat melt butter.
