Ingredients
- 4 pounds beef or pork spareribs
- ¼ cup olive oil
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 4 tablespoons butter
- 1 medium white onion chopped
- 5 garlic cloves minced
- 2 large ripe tomatoes chopped
- 6 ounce can tomato paste
- ¼ teaspoon Tabasco sauce
- 2 teaspoons Worcestershire sauce
- ½ cup brown sugar
- 1 heaping tablespoon Dijon mustard
- 1 teaspoon salt
- 1 teaspoon cayenne pepper
- ½ cup red wine
- 1 lemon juiced
Directions
- Start charcoal or wood or fire up your gas grill.
- Rub the slab of ribs all over with the olive oil then sprinkle liberally with salt and pepper and rub it in.
- Cover and set aside.
- In a large skillet over medium heat melt butter.
- When it begins to bubble add onion and garlic and sauté 3 minutes.
- Add all remaining ingredients then stir and turn heat to medium low and cook 30 minutes.
- When grill is ready put ribs bone side down in center of grill.
- Cover grill and open vents enough to make sure there is air flow then grill ribs for 1 hour turning twice during cooking.
- Baste every 10 minutes with sauce.
