Low Calorie Minestrone

2 large onions 1/4 lb. medium mushrooms 1 t. margarine 1 1/2 t. dried basil 1/2 t. dried rosemary 2 cloves garlic 5 cups water 1 can V-8 juice (30 oz) 1 cup elbow macaroni 1 t. salt 1 lb. cabbage (1 head) 4 carrots, 2 zucchini 2 large tomatoes 1/4 cup chopped parsley

Peel and chop onions. Wash and slice mushrooms Melt margarine in large pot. Add onions, mushrooms, basil, rosemary,. Saute, stirring constantly. Press garlic into mixture; stir until well mixed. Add 5 cups water and the V-8 juice. Bring to boil. Stir in macaroni and salt. Simmer 10 minutes. Wash and shred cabbage. Peel and thinly slice carrots and zucchini. Wash and chop tomatoes.Add to soup. Cook 5 to 8 minute more or until macaroni and vegetables are just tender. Stir in parsley. Serves 8 Source: My Old Recipes
