Ingredients Edit

  • 3 cups cooked rice
  • 1/4 cup chopped chives
  • 1 cup grated carrots
  • 1 1/2 cups cooked green peas
  • 1/4 cup diced pimientos
  • 1 cup diced Cheddar Cheese
  • 1 6-ounce package sliced boiled Ham, cut into thin strips*
  • 1/2 of a 0.7 ounce package dry Italian dressing mix (about 1 tablespoon)
  • 3/4 cup Mayonnaise

Directions Edit

Combine rice, chives, carrots, Peas, pimientos, Cheese and half of the Ham in large mixing bowl. Blend salad dressing into Mayonnaise. Add to rice and vegetables and toss lightly. Cool. Arrange on salad greens with remaining Ham on top. Garnish with tomato wedges, if desired.
