Macaroni and Vegetable Soup

Serves 6.

  1. Clean, peel and chop all vegetables, keep separately.
  2. Remove the bacon rind and chop in cubes.
  3. Heat some oil, fry the onions, garlic and bacon.
  4. Continue cooking for 5 minutes.
  5. Add the marrow, egg plant and green pepper.
  6. Continue frying for another 10 minutes.
  7. Add the tomatoes, parsley salt and pepper.
  8. Cook for further 15 minutes.
  9. Mix with cooked macaroni and serve hot.
