  1. Peel sweet potatoes and cut them in small cubes.
  2. Scrape and thinly slice the carrots and cut up the celery into pieces.
  3. Put all ingredients in a pot and simmer.
  4. Uncovered- first on high then turning down the heat.
  5. Simmer until the vegetables are soft.
  6. Mash mixture gently with a fork and stir.
