Dice the top side into 3/4 inch cubes place in a large pot with lid and add the Guinness slice the Mushrooms finely and add to the pot leave to marrinade over night bring to the boil and then simmer for half hour slice the carrot and add to the pot then continue to simmer for 1 hour after the hour add the beef stock leave to simmer for 10-15 mins thicken as desired and serve with boiled potatoes and veg
