Manchego cheese is a sheep's milk cheese made in the La Mancha region of Spain. Manchego is aged for 3 months or longer, and is a semi-firm cheese with a rich golden colour and small holes. It ranges from mild to sharp, depending on how long it is aged.

Spain's most famous cheese, Manchego is a rich, golden, semi-firm cheese that has a full, mellow flavor. The two that are most commonly exported are curado, aged between 3 and 4 months, and viejo, aged longer. Manchego is a wonderful snack cheese and melts beautifully in heated dishes.
