  1. Cook onions and celery in butter until tender crisp.
  2. Add rice, oranges, lemon juice, ginger, salt and pepper.
  3. Heat thoroughly, tossing lightly with fork.
  4. If desired, press firmly into individual custard cups or molds.
  5. Unmold onto serving dish with baked Cornish game hens.
