- ½ mango - peeled, seeded and diced
- ¼ red bell pepper - peeled and diced
- ½ California avocado - peeled and diced
- ¼ red onion - diced
- ⅛ English cucumber - seeded and diced
- 2 tbsp extra virgin olive oil
- salt and white pepper to taste
- Mix all ingredients together.
- Season and reserve in the refrigerator until service.
- Serve with Chilled Yellow Pepper Cilantro Soup.
