Semifreddo Edit

  1. Cut cherries into small pieces.
  2. Spread in a single layer on a foil lined baking sheet and freeze until very hard.
  3. Line an 8 inch springform pan with nonstick foil and place in freezer.
  4. Puree mango and honey in blender until smooth.
  5. Transfer to a bowl, whisk in sour cream until blended.
  6. Put eggs and sugar in a bowl set over a saucepan of simmering water, beat mixture until thick and tripled in volume.
  7. Remove from heat, fold into mango mixture.
  8. Fold half the frozen cherries into mixture and pour into springform pan.
  9. Scatter remaining frozen cherries over top of batter.
  10. Freeze until solid.

Cherry sauce Edit

  1. In a saucepan, bring ingredients for sauce to a boil, boil 6 min.
  2. Pour mixture in a blender and puree.
  3. Pour into a container and refrigerate until serving.

To serve Edit

  1. Remove sides from springform pan.
  2. Cut into wedges and place on plates.
  3. Let stand until slightly softened.
  4. Serve with cherry sauce and diced mango.
