  1. Bring sugar, vinegar and mustard to a simmer.
  2. Remove from heat.
  3. Place mangos, onions, garlic and mint in a bowl and pour hot vinegar mixture over.
  4. Add raisins and salt.
  5. Stir well.
  6. Pack into hot sterile jars and process in boiling water bath for 10 minutes.
