  1. Wash and dip mangos into boiling water for ½ to 1 minute to loosen skin.
  2. Dip into cold water and drain.
  3. Peel, halve and pit mangos.
  4. Cut halves into 3 slices (halves are fine for smaller mangos) and place cut side down into jars.
  5. Leave ½ inch head space.
  6. Bring syrup to a boil.
  7. Cover fruit with boiling light syrup, leaving ½ inch head space.
  8. Remove air bubbles with a non-metallic spatula.
  9. Adjust caps.
  10. Process pints 25 minutes, quarts 30 minutes, in boiling water bath.
  11. Store in a cool dark place.
