This rich pie gets its inspiration from the creamy fudgelike candy (penuche) made with brown sugar and butter.
Ingredients[]
- 1/2 (15-ounce) package refrigerated piecrusts
- 4 large eggs
- 1 cup firmly packed light brown sugar
- 1 cup light corn syrup
- 1/4 cup butter, melted
- 2 teaspoons maple flavoring
- 1/4 teaspoon salt
- 1 1/4 cups coarsely chopped walnuts
Directions[]
- Fit piecrust into a 9" pieplate according to package directions; fold edges under, and crimp.
- Whisk together eggs and next 5 ingredients; stir in nuts.
- Bake at 350° for 55 minutes or until pie is set, shielding edges with aluminum foil after 45 minutes to prevent excessive browning.
- Cool completely on a wire rack.
Yield: 1 (9") pie
