  1. Preheat oven to 350 °F.
  2. Lightly oil a shallow casserole dish.
  3. Arrange sweet potato slices on overlapping rows in the dish.
  4. In a small bowl, combine the maple syrup, oil, orange juice, cinnamon and salt.
  5. Pour this evenly over the potatoes.
  6. Sprinkle the top with tarragon.
  7. Cover and bake until easily pierced with a fork, but the potatoes ought to be still firm.
  8. This should take about 30 minutes.
  9. Uncover and bake until glazed and golden around the edges, about another 25 minutes.
