Maque Choux
- 5 Cups Fresh or Frozen sweet corn
- 1 Medium red onion
- 1/2 Cup bell pepper
- 1 Teaspoon salt
- 1/2 Teaspoon black pepper
- 1 Cup water
- 1/2 Cup Cooking oil
- 2 Tablespoons butter
- 1/4 Cup parsley
- 1/4 Cup green onion Tops
Put Cooking oil, corn, red onion, bell pepper, sugar, salt And BlackPepper in a Dutch Oven And Cook For 20 to 25 Minutes.Stir Often to Keep From Sticking. Add water And Stir Well. Cover AndCook For 10 Minutes.
Add butter, parsley And green onion Tops. Let Stand For 10 MinutesBefore Serving.
