Martha's Moms crew member Lynne Robbins brought this dish to one of the group's potlucks. It was an instant hit. Add it to your next cookout menu.
Ingredients[]
- 6 cups thinly sliced Walla Walla or other sweet onion (about 2 large)
- 2 cups thinly sliced peeled English cucumber (about 2 cucumbers)
- 3/4 cup white vinegar
- 2/3 cup sugar
- 1/2 cup water
- 1 tablespoon salt
- 1 teaspoon dried dill
Directions[]
- Combine onion and cucumber in a large bowl.
- Combine vinegar and remaining 4 ingredients in a small saucepan.
- Bring to a boil; cook 1 minute or until sugar dissolves, stirring occasionally.
- Pour hot vinegar mixture, tossing to coat.
- Cover and chill at least 8 hours or overnight.
Yield: 24 servings (serving size: 1/3 cup)
