A vegetarian egg roll flavored with Thai Massaman curry paste.

  • oil for deep frying


  1. In a mixing bowl, whisk the Massaman curry paste into the vegetable oil
  2. Drain and rinse beans. Add beans to mixing bowl and stir until they are evenly coated with the oil mixture
  3. Add desiccated coconut to the bowl and stir until evenly admixed with the beans
  4. Use the bean/oil/coconut mixture as filler for the egg roll wrappers and then deep fry or bake per instructions on the wrapper package
