Mexican eggnog

  1. Bring milk to a boil, cool to lukewarm and add the sugar.
  2. Bring to a boil and simmer 20 minutes.
  3. Add vanilla extract and cool.
  4. Beat egg yolks until very thick and ribbon-like.
  5. Gradually beat in milk and rum.
  6. Stir, strain and chill.
  7. Instead of vanilla, add cinnamon sticks to the milk when heating.
