Haven't tried this one yet but plan to this weekend. Want to be outside in this good weather instead of cooped up in the house.

MICROWAVE DELUXE bread PUDDING

1/4 c. brown sugar 1/4 tsp. cinnamon 3 c. cubed bread 5 eggs 1/2 c. brown sugar 1/2 c. Raisins 1/2 c. chopped nuts 2 c. milk 1/4 c. butter 1 box instant vanilla pudding In 2 quart bowl toss bread, 1/4 cup brown sugar, cinnamon and Raisins and nuts; set aside. In another 2 quart bowl mix together 5 eggs slightly beaten, 1/2 cup brown sugar, 2 cups milk, 1/4 cup butter. Microwave on high power for 2 minutes. Add to bread mixture, tossing lightly. Cover with waxed paper, microwave for 8 minutes on high, then lightly toss and microwave for 12 minutes on half power. Let stand for 10 minutes and then pour vanilla pudding over top. Serve warm or at room temperature.

Can also brown in conventional oven before you put the pudding on top if you like it a little darker in color.
