  1. Spoon rice into large mixing bowl.
  2. Blend oil, lemon juice, pepper, salt, rosemary, oregano, garlic and mint; stir into rice. Cover; let cool.
  3. Add zucchini, tomato and feta.
  4. Serve at room temperature or chill before serving.
