Ingredients[]
- 2 cups cucumber, chopped and seeded
- 1/4 cup red onion, chopped
- 2 tablespoons rice vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup plain fat-free yogurt
- 3 tablespoons fresh mint, chopped

- Combine cucumber, red onion, rice vinegar, sugar, salt, and black pepper; toss well.
- Add 1 cup yogurt and mint, stirring well to combine
