Miss Scarlett's Wine Cordial

6 cups white sugar 4 cups dry white wine (Domestic will do) 1 bottle (6 oz) liquid pectin 1/4 cup orange liqueur 1/4 cup Cr�me de cassis 1/4 cup green cr�me de menthe Paraffin Wax 6 jars or stemmed glasses (10 oz. each)

Bring sugar and wine to a slow boil in a large pot, stirring constantly. Add pectin and bring back to boiling, boil hard for 1 minute. Remove from heat and skim foam from top. Pour into 3 small bowls, about 2 1/2 cups in each.. Add orange liqueur to 1 bowl, cr�me de cassis to second bowl with a few drops of red food coloring and cr�me de menthe to the third bowl. Pour 1 color into bottom 1/3 of containers and let cool for 20 minutes. Be patient. Carefully add second layer and let set, then fill with third layer. top with paraffin wax. Note: You may have to reheat second and third layer mixture slightly in order to pour properly. An unusual layered jelly, perfect for Christmas gifting. Serve with game or fowl.
