This Recipe Came From an Estate Sale from The Steep Estate in Elmo, Texas in 1989.

  1. Bake potatoes at 400°F for 45 minutes
  2. Slice top of each potato lengthwise.
  3. Scoop out inside leaving only a thin shell.
  4. Mash potato until smooth
  5. Add milk, butter, salt, pepper and garlic and beat until fluffy.
  6. Fold in mixed vegetables.
  7. Fill shells with mixture
  8. Then sprinkle with cheese.
  9. Bake on baking sheet at 400°F for 10 minutes.
