Description

Another popular ndiwo. The leaves of the pumpkin vine are considered every bit as good as the pumpkin itself, and are ready to eat much sooner - an important consideration at the beginning of the harvest.

Ingredients

Directions

  1. Bring water and salt to a boil in a saucepan.
  2. Add chopped leaves and simmer for 5 minutes.
  3. Add tomatoes and groundnut flour, mix well, and simmer for 5 minutes longer.
  4. Serve with nsima or rice.
