Mocha Walnut Pudding Cake

Mix together in a large bowl:

1 c all-purpose flour 3/4 c sugar 3 Tbsp. unsweetened cocoa powder 2 tsp. baking powder 1/4 tsp. salt 1/8 tsp. cinnamon 1 tsp. instant coffee 1 c chopped walnuts

Combine in a small bowl:

1/2 c milk 4 Tbsp. melted butter 1 tsp. vanilla 1 Tbsp. dark rum or brandy

Pour the liquid ingredients over the dry and mix with a wooden spoon. Don't overmix. It will be quite thick. Spread the batter in an 8x8 or 9x9 baking dish.

In a small bowl, make the topping by mixing together:

1/2 c brown sugar 3 Tbsp. unsweetened cocoa powder

Pour the the topping over the batter, then pour 1-& 2/3 c hot water over the top. Bake at 350 for 35 - 40 min. Let cool an hour or more before serving. Serve warm or at room temperature, with a side of whipped cream if you're feeling decadent!
