Ingredients[]
Dressing[]
- ¼ cup olive oil
- ¼ cup orange juice
- ⅛ tsp cumin
- salt to taste
- herbes de Provence, to taste
Salad[]
- 6 oz pkg baby spinach
- ½ cup seasoned almonds
- ¼ cup feta cheese
- 4 boneless chicken breasts, cooked and sliced
- 2 oranges, peeled and sliced
Directions[]
- Place all dressing ingredients into a bowl.
- Mix well.
- Set aside.
- Place spinach in a bowl.
- Mix with almonds and cheese.
- Place mixed salad on 4 dinner plates.
- Top with chicken and garnish with orange slices.
- Drizzle dressing to taste over each salad.
