- 2 Tbsp sweet paprika
- ½ tsp cinnamon
- ½ tsp turmeric
- 2 Tbsp olive oil
- 1½ cups chopped onions
- 1 cup chopped green bell pepper
- 1 cup chopped red bell pepper
- 3 cups peeled and chopped potatoes
- 1 small butternut squash, peeled, seeded and chopped
- 2 cups peeled, chopped carrots
- 2 cups chopped tomatoes
- 1½ Tbsp Berber spice mixture
- 3 cloves garlic, minced
- 4 cups water or vegetable broth
- salt to taste
- ¼ cup chopped fresh parsley
- Pinch saffron

- 2 Tbsp cumin seeds or 1 tsp. ground cumin
- ½ Tbsp fennel seeds
- 1 Tbsp black peppercorns
- 1 Tbsp whole allspice berries
- 3 whole cloves
- ½ Tbsp coriander seeds
- 1 Tbsp grated, peeled fresh gingerroot
