Mrs. Hasagawa may be a bit forgetful, but she’s got the best fruits and vegetables in town! There’s nowhere else Nani would rather shop—although Stitch’s antics may have made returning a little tough. This tasty mix of island treats can easily be found in Mrs. Hasagawa’s market or anywhere in Hawai‘i.
Ingredients[]
- 1 tablespoon white miso
- 2 tablespoons rice vinegar
- 1 tablespoon fresh lemon juice
- ½ teaspoon grated fresh ginger
- 1 small clove garlic, pressed
- 1 pinch cayenne pepper
- 2 tablespoons sesame oil
- 2 tablespoons peanut oil
- 2 tablespoons plain tzatziki yogurt
- 1 ½ heads crisp Mānoa lettuce, cleaned
- 12 to 16 sweet grape or cherry tomatoes, halved lengthwise
- 4 small spears fresh pineapple, diced
- 1 ripe avocado, split, pitted, quartered, then diced
- 2 small Japanese cucumbers, chopped
- 1 boiled/cooked Okinawan sweet potato (or purple yams), peeled and cut into chunks
- 4 ounces Hawaiian goat cheese, crumbled
Directions[]
- Combine the miso, rice vinegar, and lemon juice in a small bowl and whisk together.
- Add the ginger, garlic, cayenne pepper, sesame oil, peanut oil, and yogurt.
- Whisk until combined.
- Divide the lettuce between four salad bowls and add the tomatoes, pineapple, avocado, cucumbers, sweet potato, and goat cheese on top.
- Drizzle with the miso dressing and enjoy.
