- 250 g mushrooms
- 2 capsicum
- 4 spring onions
- 4 sprigs parsley
- ½ tsp salt
- ¼ tsp pepper
- ¼ cup vinaigrette
Directions[]
- Wash mushrooms, capsicum, spring onions and parsley thoroughly.
- Slice mushrooms finely.
- De-seed capsicum.
- Chop capsicum, spring onions and parsley finely.
- In a small bowl, mix parsley, vinaigrette, salt and pepper thoroughly.
- In a salad bowl, place mushroom, capsicum and spring onions.
- Add dressing and toss well.
