Pleakley and Jumba are determined to blend in at Nani’s lū‘au—at least until they can get their hands on Stitch. Ordering the Spaghetti Salad is a great way to fit in. This traditional Hawaiian dish is usually served at lū‘au and neighborhood parties.
Ingredients[]
- One 16-ounce package spaghetti
- 3 ounces Japanese cucumbers, julienned
- ½ carrot, peeled and julienned
- 1 teaspoon sea salt, divided
- ½ cup water
- 3 ounces sliced SPAM®, cubed small
- 1 teaspoon white vinegar
- ¼ cup mayonnaise
- 1 pinch freshly ground pepper
- 1 pinch paprika
Directions[]
- Cook the spaghetti noodles, as directed on the package, usually about 10 minutes.
- Strain and cool the spaghetti noodles under cold running water, then set aside.
- Add the cucumber, carrot, and ½ teaspoon of salt to a small bowl.
- Mix the ingredients by hand to ensure the salt coats the vegetables completely.
- Let this mixture sit for 5 minutes, then add the water and swirl the ingredients together to remove the salt.
- Strain the water out of the vegetables by hand by squeezing them. (Note: This is a very common Japanese method for straining water out of vegetables.)
- Add the vegetables, noodles, and SPAM® cubes into a large bowl, mixing everything together well.
- Add the vinegar, mayonnaise, pepper, and the remaining ½ teaspoon of salt.
- Mix everything together well, sprinkle the paprika over the mixture, and serve.
