  1. In a large frying pan, heat oil over medium heat.
  2. Add minced Onion, and stir-cook until golden.
  3. Dissolve curry paste in water, and add to pan.
  4. Cook 1 minute.
  5. Add vegetables, and stir gently.
  6. Add coconut milk or creamer, and stir gently.
  7. Cover, and simmer for 10 – 15 minutes, or until
  8. vegetables are tender.
  9. Season with salt and pepper.
  10. Sprinkle with almonds, and serve with rice or

bread
