Nutty Fruit Boats

Ingredients

• 2 cups fresh cherries (whole-no stems)
• 1/2 cup crushed pineapple,drained
• 1/2 cup goat Cheese
• 10 Endive leaves
• 1/2 cup raw almond slices

Directions

1. Using a dinner plate as a cutting board: Dice cherries, discarding pits.
2. Fold in pineapple and goat Cheese.
3. Divide mixture into Endive leaves.
4. Top each with almonds.
5. Makes 8-10 appetizers.
