  1. Peel, cut the cucumber, remove the seeds and chopped finely.
  2. Mix the chopped cucumber, , chopped tomatoes, chopped capsicum, lime juice, chicken stock, tomato juice, minced garlic, chopped spring onions and thyme in a bowl.
  3. Cover and refrigerate for 4 – 5 hours or till the next day.
  4. Serve chilled.
