The onza roja chiles are used fresh, mashed or chopped, as flakes and as flavor, when boiled in water. The flakes are used as spices for meals like steaks, stews and grilled meats. The mashed onza roja chiles are prepared for the soups and some salads and the chopped ones are mostly integrated in green and vegetable salads, dips, dressings and salsas. A very famous recipe, which is prepared in North America, is the Onza roja chicken chilies, which is made of cooked chicken, flour tortillas, grated cheese, chopped chiles, tomatoes, cream or chicken broth, sour cream and jalapeno – this is a very spicy and flavored recipe, which is served with rice or potatoes.
