Hot (or mild) curried avocado with cool tomatoes

  1. Toast bread slices.
  2. Mash avocados.
  3. Stir in lime juice, salt, pepper, and curry powder to taste (be sure to use enough curry to provide a tangy zip!)
  4. Finely chop tomatoes.
  5. Spread avocado mixture thickly and evenly on toasted bread.
  6. Cover with a thick layer of chopped tomatoes.
  7. Eat with knife and fork!
