While in Seattle last weekend, I picked up The Cookie Jar cookbook (1978) in an antique shop so I wanted to share a few recipes with you. I'll put them in separate emails. ENJOY!

Orange Oatmeal Cookies 1 3/4 cups sifted all-purpose flour 4 teaspoons baking powder 1 teaspoon salt 1 teaspoon ground nutmeg 1 1/4 cups butter or margarine 1/4 cup grated orange peel 2 cups sugar 1 egg 2 cups uncooked rolled oats

1. Sift flour, baking powder, salt, and nutmeg together. Set aside 2. Cream butter with orange peel; add the sugar gradually, beating until fluffy. Add the egg and beat thoroughly. 3. Add dry ingredients in thirds, mixing until blended after each addition. Stir in the rolled oats. 4. Drop by teaspoonfuls 3 inches apart onto lightly greased cookie sheets. 5. Bake at 375F for 12-15 minutes.

Yield: about 6 dozen cookies

NOTE: for a more nutritious and an equally delicious cookie, increase the rolled oats to 3 cups.
