  1. Blend soy sauce, mustard, sugar and oil.
  2. Add chicken and toss lightly. Allow to stand about 1 hour.
  3. Add rice, celery, onions, and Chinese vegetables. Chill.
  4. Spoon onto salad greens, if desired, and top with mayonnaise.
