Description
Makes 6 servings
Ingredients
- 1 6-ounce package frozen cooked, peeled, and deveined Shrimp
- 3 cups cool cooked yellow rice*
- 1 8-ounce can minced clams, drained
- 1 1/2 cups diced cooked Chicken
- 1 1/2 cups sliced celery
- 1 1/2 cups cooked green peas
- 1/2 cup diced green bell pepper
- 1/3 cup sliced green onions
- 1 cup Mayonnaise
- 2 tablespoons dry white wine
- 3 tablespoons capers (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
- 2 medium tomatoes, cut into wedges
Directions
Thaw and slice Shrimp in half lengthwise. Combine with rice, clams, Chicken, celery, green peas, green pepper and onions.
Blend Mayonnaise, wine, capers, salt, garlic powder and black pepper. Pour over Shrimp mixture; toss lightly. Chill. Use tomatoes for garnish or toss with salad before chilling.
