For Indian Americans, there is nothing more iconic than a crisp Parle-G biscuit being dunked into a steaming-hot cup of masala chai. It’s the quintessential pairing, so it was easy to translate into an ice cream sandwich with our Masala Chai Ice Cream! Eat them as soon as you make them and you get the crunchy bite. Leave them in the freezer, and the cookies become super soft and taste almost like they have been dunked into chai. Both are equally delicious and nostalgic.

  1. To make the cookie butter, add 3 sleeves of the biscuits from the Parle-G package to a food processor and process until reduced to fine crumbs.
  2. Add the coconut oil, salt, and 1 tablespoon of the cream and process until well blended and a butter consistency forms, about 2 minutes.
  3. Add more cream if needed to achieve the desired consistency.
  4. It should be spreadable, like a nut butter.
  5. Line the bottom and sides of a quarter sheet pan (9 x 13 inches) with parchment paper.
  6. Scoop out the ice cream onto the prepared pan and, using a rubber spatula, spread it to the edges of the pan in an even layer.
  7. Place in the freezer until frozen solid, about 1 hour.
  8. Lay half of the remaining biscuits, bottom side up, on a sheet pan.
  9. Spread about 1 teaspoon of the cookie butter on each of the biscuits.
  10. Place the sheet pan in the freezer.
  11. Remove the sheet pan with the ice cream from the freezer.
  12. Using a biscuit as a template, score the ice cream to the size of the biscuits.
  13. If the ice cream becomes too soft, stick the sheet pan back into the freezer until the ice cream firms up.
  14. When the entire sheet of ice cream has been scored, remove the sheet pan with the butter-topped biscuits from the freezer.
  15. Using a spatula, place a piece of ice cream directly on each butter-topped biscuit, then top with the remaining biscuits, bottom side down.
  16. Place the prepared sandwiches back in the freezer until they are completely frozen before serving.
  17. To store leftovers, place in an airtight container and freeze for up to 1 month.
