  1. Combine first 5 ingredients in a medium saucepan; bring to a boil over high heat.
  2. Reduce heat to medium-high; add flour all at once, stirring vigorously until mixture leaves sides of pan and forms a smooth ball.
  3. Remove from heat, and cool 1 to 2 minutes.
  4. Add 4 eggs, 1 at a time, beating vigorously with a wooden spoon after each addition; beat until dough is smooth.
  5. Stir in 1 cup cheese and herbs.
  6. Drop pastry by rounded tablespoonfuls 1" apart onto lightly greased baking sheets.
  7. Brush tops with beaten egg, and sprinkle with remaining 2 tablespoons cheese.
  8. Bake at 400° for 16 to 18 minutes or until golden and puffed.
  9. Remove from oven, and let stand on baking sheets for 2 to 3 minutes.
  10. Remove and serve hot.

Yield: 2 1/2 dozen
