Ingredients[]
- 1 cup water
- 1/2 cup butter
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1/4 teaspoon dry mustard
- 1 cup all-purpose flour
- 4 large eggs
- 1 cup plus 2 tablespoons freshly grated Parmesan cheese, divided
- 1 tablespoon chopped fresh or 1 teaspoon dried basil
- 1 teaspoon chopped fresh or 1 teaspoon dried rosemary, crushed
- 1/2 teaspoon chopped fresh or 1/4 teaspoon dried thyme
- 1 large egg, lightly beaten
Directions[]
- Combine first 5 ingredients in a medium saucepan; bring to a boil over high heat.
- Reduce heat to medium-high; add flour all at once, stirring vigorously until mixture leaves sides of pan and forms a smooth ball.
- Remove from heat, and cool 1 to 2 minutes.
- Add 4 eggs, 1 at a time, beating vigorously with a wooden spoon after each addition; beat until dough is smooth.
- Stir in 1 cup cheese and herbs.
- Drop pastry by rounded tablespoonfuls 1" apart onto lightly greased baking sheets.
- Brush tops with beaten egg, and sprinkle with remaining 2 tablespoons cheese.
- Bake at 400° for 16 to 18 minutes or until golden and puffed.
- Remove from oven, and let stand on baking sheets for 2 to 3 minutes.
- Remove and serve hot.
Yield: 2 1/2 dozen
